Description

Ingredients

  • 1/2 of a red onion, very thinly chopped
  • 1/2 cup white wine vinegar or apple cider or red grape vinegar
  • 1/2 cup water
  • 3/4 teaspoon Kosher Salt
  • 1 1/2 to 2 tablespoons sugar (or Honey, or another substitute).
  • 1 teaspoon whole spices (optional – one or more of the following: peppercorns; fennel seeds, cumin, coriander; peppercorns; caraway, star anise and juniper; allspice.
  • Optional additions
    • 1 – 2 garlic cloves, chopped in half
    • A couple bay leaves
    • A teaspoon of dried or fresh oregano (if you use it on Mexican food)

Instructions

  1. Slice 1/2 of a red onion thinly. You can double the batch.
  2. The onion, vinegar, water, salt and sugar should be placed in a small saucepan. Bring to a boil. Stir for 1 minute.
  3. Take the skillet off the heat and allow it to cool.
  4. Place the onions and liquid in an airtight container and keep in the refrigerator.
  5. If you wish, add fresh herbs.
  6. It will keep for 2-3 weeks in the refrigerator.

Notes

  1. To make pickled onions Mexican-style, add whole cumin, coriander seed and Mexican oregano.
  2. To make pickled red onions Nordic-style, add fresh dill and caraway to the mix.
  3. An Indian version of pickled onions can be made by adding fennel seed, coriander, and either fenugreek or cilantro.
