  • 2/3 cup bulgur
  • 1 cup boiling water
  • 2 lbs ground lamb divided
  • 1 cup mint chopped divided
  • 1 medium yellow onion about 1 cup minced, divided
  • 1 clove garlic minced
  • 1 tbsp + 1 tsp Middle Eastern Spice Blend divided
  • 2 tsp kosher salt
  • 1/2 cup crushed ice
  • 1 tbsp olive oil
  • 1/4 cup pine nuts

Tangy Yogurt Dip

  • 1 cup plain Greek yogurt
  • 1 clove garlic crushed into a paste
  • 1 tbsp lemon juice
  • 1 tbsp mint leaves chopped
  • salt to taste
  • canola oil for frying

Instructions
 

  • Boil the bulgur in a large bowl and let it sit for 30 minutes.
  • Prepare the kibbeh paste while you wait.
  • Blend 1 1/2 lbs ground lamb with 3/4 cup mint, 3/4 cups minced onion, garlic, 1 tbsp MESB, 1 tsp salt, and 1/2 cup crushed ice in a food processor until smooth.
  • The kibbeh paste should be similar to mashed potatoes.
  • Place the processor bowl in the refrigerator to cool down while you prepare the filling.
  • Heat the olive oil in a large skillet on medium heat.
  • To season, add the remaining lamb and the onions.
  • Sauté the lamb until cooked.
  • Place the meat in a strainer set into your sink.
  • Put the meat back in the pan, add the mint and pine nuts, and heat for five minutes.
  • Let the yogurt sauce cool before you prepare it.
  • Mix all ingredients together in a small bowl.
  • Let the mixture sit in the refrigerator while you prepare and fry the kibbeh.

  • In a saucepan, heat 2 cups canola oil on medium heat.
  • Fry the kibbeh in batches, cooking for 4-5 minutes per side.
  • Drain the oil from the pan and place on paper towels.
  • Keep the kibbehs warm until you are ready to fry them.
